My Favourite High Carb Low Fat Desserts

I have a major sweet tooth and it's difficult for me to find recipes that are low fat, high carb but also low in refined sugars. These 3 recipes are great because they tick all the right boxes. I've made them time and time again and am still crazy about them. In typical Madalin style, they are also super easy to make, the throw-everything-in-a-bowl type! I often make big batches of these and freeze in case of emergencies ;)  

First off the bat, these sweet potato brownies with zucchini... sounds totally weird but trust me, these are delicious! This was one of the first recipes I made so holds a special place in my heart! You don’t have to add the zucchinis but I think it adds a little moisture to the brownies. I make a big batch and store them in the freezer. When I’m craving something sweet (which is most of the time!) I like to add some dark chocolate and raspberries on top and then reheat one for 30 seconds in the microwave. I’ll have this after lunch as I love to finish off with a sweet treat!

SWEET POTATO BROWNIES 

2 large sweet potatoes, skin removed  
1/2 cup quinoa flour or oat flour  
1 zucchini, grated (optional, but recommended for added moisture)  
1/2 cup cocoa powder  
1.5 tsp baking powder  
2 eggs  
3 egg whites  
1/3 cup raw organic honey

Fat free, sugar free, oil free, gluten free muffins! This took me forever to find, so thank you Bren! I haven’t made them with overripe bananas as I’m never that organised, so have only tried the applesauce but I’d like to give that a go as well. You can also add lots of yummy additions such as blueberries, goji berries or pumpkin spice.

HEALTHY OATMEAL MUFFINS

2 ½ cups old-fashioned oats ( 1.5 cups ground, 1 cup whole)
2 Tbsp old-fashioned oats for muffin tops
2-3 large overripe bananas (1 cup mashed or or 1 cup applesauce)
2 large eggs lightly beaten
1/3 cup honey
3/4 cup milk
2 tsp real vanilla
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon

I love sticky date pudding and carrot cake, so naturally I love this recipe! I don’t have the ramekins required for this recipe so I like to double the ingredients and make muffins instead. I’ve heard you can also use bananas instead of dates and they taste really yummy. I also use half the recommended sugar that is suggested as there is a lot of natural sugar that comes from the dates.

DATE AND CARROT PUDDINGS

125g (1/2 cup) fresh dates, pitted, chopped
1/2 teaspoon bicarbonate of soda
30g low-fat dairy spread
2 tablespoons brown sugar
1 egg
1 teaspoon vanilla essence
1/2 small carrot, grated (see note)
1/2 cup self-raising flour
1 teaspoon pure icing sugar and 150g tub light French vanilla Fruche, to serve
